Black Bean Sandwich

So here it is. David's World Famous Black Bean Sandwich.

Take a can of drained and rinsed black beans. 1/2 bell pepper, green, red, whatever (diced), 1/2 minced onion, 1 cup cooked rice (brown or not), 1 cup dry old-fashioned oat meal, two egg whites (or not if you want vegan sandwiches). Spice as you like. I last used some Mrs. Dash Chipotle and some garlic powder. Toss everything in the mixer and slowly increase the speed without tossing the whole shinola on out on the counter. Stop before you get a paste of one color.

You can serve cold as a salad-like sandwich or George-Foreman 3/4 cup patties as a hot sandwich. I tried a new trick this time. I used a large piece of parchment paper sprayed with olive oil and cooked them between the folded sheets. This kept the grill from eating the top layer.

And on a side note, did you know that you can sand-paper off the top layer of your headlights when the lens gets cloudy? The kit beats spending $90 and up!
